    How to make diner-style fried chicken at home with an unbelievably crispy golden crust

    There is something special about classic American diner fried chicken, with its crunchy golden coating, juicy meat and generous seasoning that makes every bite taste like proper comfort food.

    The good news is that you don't need a restaurant kitchen to recreate it at home, and a few simple tricks can help you achieve that crisp, craggy crust without the chicken turning greasy.

    What ingredients do you need for crispy fried chicken?

    This recipe serves four people and works particularly well with bone-in chicken thighs and drumsticks, which stay juicy while the coating turns beautifully golden.

    Ingredients

    • 8 pieces of chicken, such as thighs and drumsticks
    • 2 cups buttermilk
    • 2 cups all-purpose flour
    • ½ cup cornstarch
    • 1 teaspoon baking powder
    • 2 teaspoons paprika
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1 teaspoon black pepper
    • 2 teaspoons salt, plus extra to taste
    • ½ teaspoon cayenne pepper, optional
    • Vegetable or peanut oil, for frying

    How to make classic diner-style fried chicken

    Step 1: Marinate the chicken

    Place the chicken in a bowl with the buttermilk and one teaspoon of salt, making sure every piece is coated.

    Cover and refrigerate for at least four hours, or preferably overnight, to help season the meat and keep it tender.

    Step 2: Make the crispy coating

    In a large bowl, combine the flour, cornstarch, baking powder, paprika, garlic powder, onion powder, black pepper, remaining salt and cayenne.

    The cornstarch helps create a crisp coating, while the baking powder helps give the crust a lighter, craggier texture.

    Step 3: Double-coat every piece

    Remove each chicken piece from the buttermilk, allowing the excess to drip off, then press it firmly into the seasoned flour.

    Dip it briefly back into the buttermilk before coating it in the flour again, pressing the mixture into the surface to create those rough, crunchy edges.

    Step 4: Fry until golden and crispy

    Heat the oil in a heavy, deep pot to around 325–350°F, using a thermometer to monitor the temperature.

    Fry the chicken in small batches without overcrowding the pot, adjusting the heat as needed to maintain a steady temperature and cooking until the crust is deep golden and the thickest part of each piece reaches 165°F internally.

    Transfer the chicken to a wire rack rather than piling it onto paper towels, which can trap steam and soften the coating.

    The secret to getting that proper diner crunch

    The biggest mistake is letting the oil get too hot, which can brown the outside before the chicken has cooked through.

    Keeping the temperature steady, double-coating the chicken and allowing excess oil to drain on a rack will help deliver a crisp exterior without sacrificing the juicy meat inside.

    Serve your fried chicken hot with fries, creamy coleslaw, pickles or buttery biscuits for a classic American diner-style meal at home.
